      <image:caption>Making a chocolate dark beer has been a long time ambition at Dookit Brewing. It’s such an appropriate and delicious drink to reach for at this time of year. Keeping it local I contacted the finest of chocolate makers: Bare Bones Chocolate, who are a few mere miles away from the brewery. They consistently produce excellent chocolate from single origin, organic cacao beans. Championing ethical and slow food processes, they hand craft their chocolate from bean to bar right here in Glasgow. It really is the best stuff around. And they’re seriously nice folk! Cameron and Lara welcomed me warmly to their wonderful factory. It was a pleasure to all work together, including artist @shae.guava , a friend of Bare Bones, who nailed the label brief. Her artwork wittily captures the essence of good collaboration while maintaining a curiously cute weirdness. When preparing the recipe, Cameron and I tasted several kinds of cacao nibs from Honduras, Madagascar and The Dominican Republic and went with Cameron’s idea of pairing the cacao from the latter two countries. The cherry flavour you get from the Madagascan and the creamy fudge sweetness from The Dominican Republic nibs combine beautifully. Then, from ‘bean to bar’ Dookit Brewing intervened and added six kilos of both husk and nib across a special dark brew. An aromatic, unique and expressive chocolate profile comes through. You get lots of cherry on the nose and then a spectrum of nutty, fruity, sweet, coffee and almost liquorice-like flavours are present when tasting. Expect a mild acidity and a medium, well rounded mouthfeel. The beer has a light bitterness and a nice bramble impression from the Bramling Cross hops. Plenty of Scottish oats and a well considered, ten-plus, malt bill makes for a smooth and very pleasant chocolatey experience.</image:caption>

      <image:caption>‘Dost thou think that because thou art virtuous, there shall be no more cakes and ale?’ – Twelfth Night: Act 2 Scene 3 More Shakespeare in craft beer. That’s what we say. And reach for that cake. Reach for that ale at Christmas. Treat yerself!  Cakes &amp; Ale was our festive release of 2024 and may well become our annual Christmas special. Packed with fresh ginger and locally sourced honey, it is not based on any particular style. Rather, the flavours of the famous German festive cookie were naturally emulated. A small addition of spices were added: mainly ginger and cinnamon with a pinch of freshly grated nutmeg, cloves and green cardamom. Other adjuncts, which are commonly found in lebkuchen recipes, were added too: fresh lemon and orange zest and honey roasted almonds. At the base you have Maris Otter for a decent sweetness alongside several specially selected crystal malts for their nutty, caramel and toasted impartations. FYI: Best Caramel Aromatic and Caramel Munich III were truly a winning combination if you’re wanting baked nutty sweetness! The result? Orange blossom and zest on the nose followed by honeyed ginger on the palate atop luxuriously caramelised and mildly nutty maltiness. It is not a dark or heavy beer. It holds a deep glowing red colour; rich but not too rich, sweet but not saccharine, Cakes &amp; Ale is a lovely Winter treat.</image:caption>

      <image:caption>Remember that export strength Oyster Stout brewed 2023 ? Well we tucked away 64 litres in an ex Speyside whisky cask, which once held Oloroso sherry. And now it’s sitting beautiful and proud in shiny, wax dipped 750ml bottles. The beer lay in the compact octave cask for just shy of a year, drying it out and building up complexity. Now sitting at 7.5% you get an array of dried fruit characteristics, marzipan aromatics and a persistent oaky undertone. As our first ever barrel aged beer release we are so excited to share it with you all. Drink now or age up to five years if not a wee bit longer. Brewed with Loch Fyne and Isle of Gigha oyster shells, and single origin cacao husks. Expect intense Oloroso scents and a roasted, rich and dry finish with a touch of salt.</image:caption>

      <image:caption>As part of our ongoing Seasons Change range we welcome the third iteration of the Cone Zone: a Dark Mild Ale hopped with green Cascade grown in the Southside of Glasgow. After a wash out Summer it seemed best to use the wet hops in a malt forward brew. Also, Milds and 60 Shilling Ales are one of our favourite styles to brew and drink: light &amp; delicate caramelised flavours pair so smoothly with a low abv beer lacking bitterness. Cone Zone V3 is a great example of the style if you don’t mind me saying so. Dropping the pH in the mash lower than you would expect for most dark styles allowed for an acidity, which combines very nicely with the surprisingly citrusy wet Cascade. The main flavours are of milk chocolate and mildly roasted coffee but these never overrun the palate. It’s a pleasant and easy going brew. Simple and true to style. Not to mention honouring the brewery’s ethos of looking local for ingredients and getting creative.</image:caption>

      <image:caption>UK grown Cascade, Bullion and Ernest make for an intensely fruity and bitter drinking experience. The grassy earthiness alongside the citrus and apricot flavours are complemented by the Scottish chanterelles. The mushrooms, which pop up around June time, give a tangy apricot aroma alongside a peppery flavour. The perfect adjunct to an incredibly fruity and subtly spicy, double dry hopped IPA.  We went by the 'less is more' mantra, as is usually the best way with most peculiar adjuncts. 1.5g of chanterelles per litre of beer were added at the dry hopping stages, adding a background note &amp; building complexity: a curiously fragrant sidekick to flavours which were already there.  Maris Otter and a hefty dose of Cara Gold makes for an intensely malty and caramel sweet base. Your eyes are met by a golden sunset orange colour and the Bullion hop gives off whiffs of that green fruit pastel note. (I kid you not!) When tasting, the beer is refreshingly dry and resounds with resinous bitter notes, which are mingled with bursts of full-on fruitiness, mainly of the citrus and stone fruit varieties. The mushrooms hide in plain site playing with the apricot flavour, drying the beer out and then builds on the spicier side of the palate. Brewed in collaboration with Amy Rankine, friend and expert forager, who had the idea brewing for quite some time (all puns intended). Cheers Amy! To keep the pun game going strong we named it after Robert Burns' anti-hero Tam O'Shanter. The poetic tale of nighttime ghouls fits well with the spooky season we’re about to enter. It also acts as a cautionary message of not over-imbibing during the dark seasons ahead.    A huge thank you to the brilliant Jonny Mowat for creating the hilariously terrifying, mushroom headed, Tam O' Shanterelle. You’re some fun guy!</image:caption>

      <image:caption>Named after my lovely late Gran, whose support meant Dookit could set up its own brewery, the beer is sweet, easy- going and delightful. Much like she was really. Although it’s a bit bitter! And she didn’t have a bitter bone in her body.  Artwork by my other beautiful late Gran: Katie Clark. A great Glaswegian artist and much loved woman. Those of you with keen memories may remember the Zana: a light and crisp Summer Ale, which was the first release from our Tollcross home back in the day. Zena, as a beer, is a riff on that recipe whereby the lager grist and yeast is replaced by ingredients fit for the most sessionable ale. Extra Pale Maris Otter malt is bulked up by Scottish oats, Cara and dextrin malts. Saphir hops were added to the mash for delicate orange citrus flavours. Then, a go-to Dookit Brewing hop combination of Endeavour and Pilgrim was added in the kettle providing a British fruit basket of flavours. Expect orange zest, brambles, red berries and pear alongside freshly baked bread smells and a decent, grassy bitterness.</image:caption>

      <image:caption>Treat Yerself Silly is a strong, sour beer heavily fruited with Perthshire blackcurrants, raspberries and redcurrants. Brewed as a big happy 10th birthday gift to the much loved Redmond’s of Dennistoun, Glasgow. Treat yourself with bundles of frothy Petit Filous nostalgia abed a pillowy-sweet pale ale. Jammy, nippy and tangy this wee stubby is a perfect aperitif or desert.  An oaty Maris Otter base was built up by Plumage Archer, Melanoidin, medium crystal and dextrin malt. All amounting to a smooth, caramel and slightly toasted taste. A lactobacillus plantarum culture soured the wort to a pH of 3.4 and a very small amount of Endeavour and Admiral hops were added to complement the brambles.  With 285 grams of fruit per litre of beer this is Dookit Brewing’s fruitiest release to date. However this is no smoothie of a beer: a long conditioning period allowed for a crisp medium body. Expect mostly blackcurrant and raspberry with an undercurrent of redcurrants, which add a subtle savoury edge.  Happy 10th birthday Redmonds! And a big hats off to James Ross, the talented artist who created an out of this world scene for the label.</image:caption>

      <image:caption>We collaborated with Uto Beer down in London on this one. The expert Borough Market beer mongers were fancying an all English hopped special pale for the Summer. One that really makes the hops sing.  We landed on some of our favourite hop varieties and got to work. Extra Pale Maris Otter was paired with Cara Gold malt for a subtle sweetness and some oats bolster the body. A heavy dose of Admiral hops at the end of the boil met modest handfuls of Endeavour and Pilgrim. Then, similar to the core range pale, Cascade and Ernest were added at the dry hop stage but in larger quantities.  The result? A juicy, light and super dry hoppy pale ale bursting with flavours of intense apricots, freshly cut oranges and limes. Expect tropical and citrus aromatics. Green fruit pastels come to mind and there’s even a bit of Irn Bru at first smell. Then it’s all finished off with a pithy dryness and satisfying bitterness.</image:caption>

      <image:caption>Before you ask this ain’t Steve Clark’s lager. The name also belongs to the Glaswegian side of my family and so this is for them. An easy-going beer fit for a Summer’s night and Dookit Brewing’s answer to a certain, highly popular lager brewed just down the road from us.  The base is all Hana malt for freshly baked goodness and a little honey. The hops are sourced from a family owned and carbon neutral farm down in Kent, which has fast become our go-to place for hops. The Pilgrim and Fuggle in this brew offer up grassy, hedgerow and earthy flavours, along with pear-like, red berry and minty notes too.  This Pilsner does take some inspiration from many macro lagers in that it has a low-ish abv (4.5%) and has a low bitterness (20 IBUS). But it’s done the Dookit way: small scale brewing with all natural ingredients, low intervention methods, no filtration and bottle conditioning.</image:caption>

      <image:caption>Lupo Pils is a premium Italo Pils with Adriatic Eraclea Pilsner Malt at the base and Perle and Saphir at its flowery tips.  This one goes out to Agostino Arioli, the pioneer behind the lush Italo Pils style. His boldness and creativity to take a German Pils and dry hop it deserves the credit it has been given over the years. And now we offer up our iteration…  Lupo Pils is a homage both to the OG and much loved Italo Pils from UK breweries. Making the most out of the long and cold Glaswegian Winter we conditioned the lager low and long. Refreshingly dry and crisp goodness comes to those who wait.  A double Saphir dry hop gives the beer sweet tangerine smells. Fresh grass, herbal and spicy notes amounts to a pleasing noble hop impression and the aromatic Eraclea Malt lends a lovely honeyed profile.  We’re proud of our addition to this relatively young sub-category of Pilsner Lagers. It captures the green, uber-fresh German hop character and is a perfect choice for longer Springtime days.</image:caption>

      <image:caption>A modest dose of @blackthornsalt and East Lothian sea buckthorn creates a distinctive character to this bright, zingy and refreshing sour beer.  @seabuckthornscotland is a social enterprise who ethically forage their berries over on the East Coast. The resplendent wee fruit packs a tart and restorative punch. It also boasts of several health benefits. A perfect addition to any cleansing Spring ale!  It can, however, become astringent and so only a very small amount was used to complement the clean and citrusy Lactobacillus plantarum culture. Along with the freshly ground coriander and Scottish sea salt, a floral, and slightly sweet flavour arises.  The sparingly dosed sea buckthorn means a bright straw colour is achieved with a bit of haze. You can smell the berry too. The aromas oscillate between fruity and creamy esters. Some peachy and even pineapple notes come to mind. Pleasant memories of drinking Lilt as a kid in the summer pop up too. However, the dominant fruity note is citrusy and a clean lemon one at that.  The salt is subtle but it’s there. By the mid palate you get its delicate sweet and umami character. A touch of its tannic nature is present too enthused by the hardy blackthorn branches, which the Scottish sea water is filtered through several times over. The addition is on the lower side of stylistic guidelines (88g/L). Just enough to notice it’s there and for it to work its magic; the salt makes for a dry and crisp finish, which will leave you feeling refreshed.</image:caption>

      <image:caption>Sweet Fuggle is a fresh Table Beer hopped with (yes you guessed it): Fuggles! The brew celebrates the marvellous hop and how satisfyingly guilt free a Table Beer can be when done right. A bounty of Scottish oats and a high finishing gravity means that this wee beer is not lacking in body or mouthfeel. Expect delicate citrus and floral aromas followed by well grounded hedgerow and plush berry flavours.  The incredible photo on the label is of the launching of the ‘JO SELJE’, taken in 1993 at the Kvaerner shipyard, Govan. Photographed by local photographer, Jeremy Sutton-Hibbert).  Jeremy very kindly offered to take some photos of the brewery too and I’m very glad he did. It occurred to me that the process at Dookit Brewing hasn’t been shared in great detail and so here are a few snapshots. (Cheers Jeremy!) You may see why the name Dookit Brewing was decided on. It’s just me, myself and I on the production and packaging side, making beer in a very small, Dookity like space, in the East End of Glasgow. Please flick through to see me most likely rambling on about temperature and pH, various shots of the mash in and a shout out to the mightily squeaky wee labeller that is still going strong (any suggestions for a name would be most welcomed!       <image:caption>No Work Today! is made using oyster shells from Gigha and Loch Fyne, cacao husks and Belgian dark candi sugar. It’s a confirmed-cockle-warming Winter special. Expect flavours of sea spray, caramel, blackberries, coffee, baked nuts and chocolate. Up front it's like a luxurious block of chocolate sparsely studded with salt crystals. Then that heavy bitterness and charged roasted character permeate the finish.  Apologies to all vegans and vegetarians as this is our first non vegan friendly beer. But the urge to experiment with the Oyster Stout style became too strong to ignore. What if, I thought, you just add the oyster shells to complement the chocolate flavours, buffer the pH and exacerbate the roasted dryness? Leave out the flesh to avoid a briny body. After all Export Stouts need to have that fiery bite and gritty texture. The result is balanced and successful: a decadently complex Export Stout has been produced. A most fitting companion for the cold snap we’re in.  Many thanks to @petermckennaglasgow1 and the chefs @crabshakkbotanics &amp; @crabshakkfinnieston for the spare shells that would have otherwise gone to waste. You may also like to know the spent oyster shells after the brew day went to a local allotment where they will be broken down to supplement chicken feed. (From one shell to another the calcium carbonate circle continues!) Another huge thanks to @frangordon_ for the alluring &amp; abstract artwork adorning the shiny label.  For those still reading, and interested, the name 'No Work Today!’ is a reference to the Disney song adaptation of Lewis Caroll’s poem ‘The Walrus and The Carpenter’, where some poor oysters infamously feature. A fitting name for a strong beer released so close to the holiday period. Furthermore, my dear late Glaswegian Grandma had a toy shop in town, back in the day, called 'The Walrus and The Carpenter’. So it all seemed very appropriate.</image:caption>

      <image:caption>Lucania is a Scottish Plum Porter brewed in collaboration with the wonderful Closet Brewing. I’ve been loving what these lovely people have been up to the past few years, and was over the moon when they accepted the invite to come over for a brew. The beer itself is a bit of a homage to Titanic Brewery’s famous iteration of the style. Luckily Lizzie &amp; Lucy from Closet Brewing were on board with the idea. With their hands on approach and expert inputs a chocolatey Porter with sumptuous plummy notes was produced. 100g per litre of 100% natural Perthshire plum purée, of the Victoria, Opal and Marjorie's Seedling variety, was added across the boil and in the fermenter. A very small amount of natural plum essence was also added at the end of a very long conditioning period to conjure up an intriguing sweetness.  The result is delicious. The colour is a deep red mixed with a hazy purplish tint. A creamy tan head lofts up smells of dusty milk chocolate. The plums pair perfectly with the darker roasted malts to create chocolate coated confectionery flavours. Tangy Turkish Delights come to mind but it's not saccharine. In fact the dry and smooth finish takes over mid palate before any of the sweeter flavours take hold. All in all it's a juicy indulgent treat of a Porter well suited for the cozy nights we have to look forward to.</image:caption>

      <image:caption>Those with keen memories may remember our Double IPA using Glasgow grown hops last year. We were so pleased with the quality of the hops that we went back to harvest this year's crop. This time we have gone in a different direction: Cone Zone V2 is a classic 3.9% Green Hop Harvest Ale. We wanted to see what the Scottish Cascade really had to offer, so no other hop was added at the end of the boil. Six kilograms of the freshly picked Cascade were added at flameout and in the hop stand. Ordinarily, this is a large amount for such a small brew (6000g in a 375L brew: 16g/L), but a lot of that weight is moisture still retained in the undried green hops. The flavour and aroma is not as intense as a result. The beer displays delicate citrus, green fruit and herbaceous aromas. When tasting soft flavours of green pepper and pink grapefruit arise with a hint of cassis. A nostalgic foam banana sweetie flavour is present too. All in all it’s lagery, very food friendly and easy going.  Despite it’s subtlety and lightness there is a definite hop character to Cone Zone V2 that provides great thirst quenching satisfaction and taste. And at only 3.9% abv it is a perfect session strength ale. Perhaps something we all need in the fridge for the sometimes over indulgent season ahead of us! A huge thank you once again to Gary for allowing us to harvest and use the hops. (Thank you to him, Tam and Fran for the help in harvesting too).  Call me a nerd, but it’s genuinely exciting to see what the future holds for Scottish hops. I’m sure there are many folk out there who agree and already grow their own aromatic and impressive cones on well established bines. I already look forward to Cone Zone V3 next year where we can increase the yield by harvesting another varietal, somewhere nearby I’m sure. (@monicawilde I’m looking at you!)</image:caption>

      <image:caption>A brewery releasing a lager in the Summer with Oktoberfest around the corner is not unheard of. But it’s a proud first for Dookit Brewing. When first starting up the brewery a wise beery owl told me: ‘focus on the ales man’. Great advice, which I’ve followed through with. Now the limelight wanders over to the colder side. The long and low realm of fermentation where monitoring and patience is key. Where opinions vary and the history is rich.  The challenge hasn’t been without its stresses but the result makes it all worthwhile. A pale and bitter lager has been brewed and stored cold for seven weeks. The water profile was untampered with as it is almost uncanny compared to Plzeň’s, the birth place of Pilsner: superbly soft, clean and sparse in its minerality. Organic First Gold hops, the world’s first hedgerow hop, offer up a plush and spicy marmalade aroma and bitter the beer high to Germanic Pilsner levels. The base malt is Scotch Annat, a heritage barley variety grown over in Fife by @craftymaltsters. The fresh bread flavour and crispness is elevated by this beautiful native malt. I look forward to brewing with it again.  As you can see the components in the beer are diverse but so is Glesga. Brilliantly so.</image:caption>

      <image:caption>Also known as a ‘haskap’, the humble honeyberry grows very well in Scotland although is not native to this land. Often described as a long bobbly blueberry with a touch of raspberry, there are also grape-like qualities in its texture, taste and acidity. With many health benefits associated with the fruit it makes for a fascinating wee thing. Even the word ‘haskap’ derives from the Japanese name ‘Haskappu’ meaning: ‘little present at the end of the branch’.  The fruit’s jammy, floral and vinous character pair excellently with a farmhouse style pale ale. This is not a sour beer. Although the 175g/L of haskaps displays a bright acidity up front. It was co-fermented with a Voss Kveik and farmhouse Saison strain to add a citrusy-spiced dryness, making you reach for that next sip.  It pours a deep hazy coral colour and smells amazing. Aromas of orange &amp; lemon peel waft up with notes of grapefruit, blueberry, hibiscus and honeysuckle. There’s also this creamy, marshmallow-sweet smell, conjuring up a bowel of strawberry ice cream. Yum! When tasting there’s a mellow acidity combined with a medium bitterness. The honeyberries complement the citrus character of the Endeavour and Admiral hops. Then the dry saisony finish is backed up by the spicy quality you find in Endeavour.  A complex and intriguing wee beer this is. Different and out there. But that’s what holidays are all about!</image:caption>

      <image:caption>Back in the dreich midwinter the formidable Fede from @slowfoodglasgow and the inspiring chef @petermckennaglasgow1 from @thegannetgla kindly met with me to plan a Springtime brew using organic ingredients, including locally foraged goods.  The result? A light and refreshing beer heavily hopped with organic Wakatu and sparingly dosed with sticky willies and sugar kelp.  The grassy-cucumber note picked up from the seedling sticky willies from Queens Park pair nicely with the up front lime and floral aromatics from the New Zealand hop. Like any good Spring tonic though, you want to balance the fruitiness. The savoury salinity from the sugar kelp does exactly this, while smoothing out the body. The foraged additions are certainly a back note, but an important one. They make for a unique, intriguing and delicious drink. So an indulgent double dry hopped IPA was brewed to honour our home in the East and our love of @brookhousehops. The base beer is akin to Southside Pale but elevated to hoppier, fruitier, stronger and sweeter heights. A generous dose of Bramling Cross and Goldings make way for summer berries, brambly goodness and that classy hedegrow bite.  The second large dry hop was all UK Chinook to add a zesty orange character to the fruit bowl mix, alongside a subtle piney note.  @whc_lab Saturated is perhaps the star of the show. It’s giving tropical flavours of candied pineapple and mango, all the while lifting the fruitier notes from the hops. (Anyone getting strawberries and cream? Raspberry coulis?</image:caption>

      <image:caption>A perfectly light and lagery ale for Hogmanay. Brewed in honour of our pithy Bard on his special day come January and true mid Winter.  A fairly traditional British Golden Ale recipe fermented with Voss Kveik, Cup O’ Kindness will keep you sweet. The clean orange-citrus esters from the yeast blend enormously well with the Winter berry flavours and subtle spiciness you get from the English hops.  Endeavour, Goldings and Bramling Cross flavour the beer and lend themselves to the juicy, bramble-like aroma. A mixed up mash made up of pilsner, maris otter, Munich, chit, oats and spelt create a fluffy, light-medium bodied and dry beer with a golden sunshine hue.  This straw-like, low Winter sun yellow is reflected in Clare’s artwork. The spirit of Hogmanay and the sense of community, conjured up in Burns’ famous New Years anthem, is delicately and beautifully portrayed in Findon's illustration, evoking harmony and hope. The beer pours like a lively helles with a thick and persistent, cuff-like head. Foamy bubbles elevate smells of candy floss, treacly flapjack and mango rice pudding. There’s even a whiff of irn bru going on, and impressions of blackcurrant, loganberry, elderflower and heather honey.  What permeates predominantly on the palate, however, is sweet satsumas and a clean citric acidity. So, call it a St. Clements, because it’s pure oranges and lemons. But then a pulpy dryness takes ahold with that Pilgrimmy bitter twang peppering the long finish.</image:caption>

      <image:caption>Decadently smooth with warming gingerbread notes, Cheerful is a luxurious 9.2% Winter Saison bound to put a smile on you and your pal’s faces. Notes of sticky banana bread drizzled with fresh lemon juice come to mind alongside cracked toffee apples with a dusting of that famed Saison pepperiness. Now here’s the geeky part: a farmhouse-saison yeast blend was put to work at warmer temperatures (26C) to attain all those spicy esters. Then 67g/L of silky all-natural plum purée was added very close to the end of fermentation for jammy aromatics and a plump fructose sweetness. A small addition of specially kilned Belgian malts balance the fruitiness with richer caramel and raisin like flavours. When drinking the warming dryness arrives at the finish and stays with you in the aftertaste. The complex spiciness is there too, created by the yeast, grains of paradise, spelt, and English hedgerow hops. Like every good Saison, it is difficult to pick out a singular spice from the mix. Although the grains of paradise does give the beer a pleasing gingery undertone. Many thanks to @tintinart for the most fun-filled and awesome artwork. It resembles the best Christmas card never made, makes you Cheerful just looking at it and it even portrays a couple of festive doos!</image:caption>

      <image:caption>A magically true, local phenomenon of a brew. A story of discovery where lush bines of luminous Cascade hops were found growing in the open Glaswegian air… Back in September the very generous, green-fingered Gary of Queens Park allotment fame, kindly offered up his fresh bounty of fragrant hops. Gary- we salute you!  This hopportunity was just too good to pass up. So we got to work. We mashed in at the crack of dawn then went to the top of Queens Park, empty buckets clutched in our hopeful hands, to reap our reward.  Six kilos of the zingy-green Cascade hops went in at the very end of the boil. The beer went on to become a Goliath of a Double IPA: a whole load of Admiral was added at the dry hop stage to bulk up the orange-citrus character of the beer. A smidgen of Eclipse, Enigma and Azacca also went in to complement both the orange and piney-resinous flavours.  Cone Zone also sees Dookit’s first foray into heritage malt varieties. Plumage Archer has been making a come back for some time now and it’s great to finally brew with it. The thickly pleasant caramel notes brilliantly softens the high alcohol content.  This strong IPA should please most hop heads. There’s enough balance between the piney notes and fruitiness to satisfy West Coasties. But it’s not too bitter and has a pretty soft mouthfeel, so East Coast fans please gather round, don’t be afraid. And more: the malty sweetness and lower carbonation give the beer a kind of smooth weight the real ale and traditional British IPA enthusiasts will love.  The beer pours a deep golden marmalade colour. On the nose there’s sweet tinned tangerines soaked in a boozy punch. And on the palate the peppery bitterness from the much loved Pilgrim hop blends real nice with the herbal quality of the green Cascade hops.</image:caption>

      <image:caption>A smooth and comforting chestnut brown ale to suit the season. No airs, no graces. Just bare faced malty goodness simply hopped with English grown Chinook and Endeavour.  But do not be deceived! A Mild is seemingly straightforward, but can still offer pleasing complexity. Hints of medjool dates, prunes and blackcurrants lie atop a bed of caramel wafers and toffee crisp bites. A subtle bitterness, signature to the style, breaks at the end over a medium carbonation. There's this Kenyan coffee note too with those berry-like and vibrant citrus qualities you get from the bean. The acidity is much milder (as you'd expect) but it melds with the sweetness of the malt to create impressions of toffee apples. And more: notes of Dairy Milk Fruit &amp; Nut, fresh wet tobacco and, ever so slightly, ginger and star anise arise from the glass.  So in a nutshell we've got nutty-chocolatey flavours from the malts and fruity goodness from the hops and yeast. Job’s a gooden’. Milds are cool. We should all drink more Milds.       <image:caption>ZANA is our inaugural brew on our very own kit and it suits the season for sure. Crispy boi drinkers, craft lager fanatics and really just about anyone who likes a light beer in the sunshine, this brews for you.  Pouring a golden straw colour with foamy froth, the beer pops with honey-sweet and crisp aromas. The body is light and texture dry. The flavour limey with touches of ripe juicy berries. Then a peppery and well-rounded bitterness from the enticing English hop Pilgrim comes to the fore, but never takes hold. Thank you Pilgrim- humble journeyman of smooth spicy depth. The artwork for the label is by, Calum, a Southside neighbour, dear friend and brilliant artist. In the end the various containers in his studio space called out to us. They’re reminiscent of parks filled with picnickers in the high summer sun and, conversely, breweries littered with buckets, vials, jars, bowels, tinctures, tanks and many an odd shaped container all around. It’s about time these humble carriers of precious liquids get their time in the spotlight!</image:caption>

      <image:caption>This is a limited run of 160 x 750ml sharing bottles brewed in collaboration with the bodacious @bodenbrewbeer. The result? It’s a nippy humdinger brimming with fanciful fruity flavours. A dark and sour strong beer. Mulled and mad. Reminiscent of minced pies, snakebites and your favourite tangy childhood treats.  Now here’s the geeky beer bit: we wanted to go for a dubbel in style with an exotic twist. It lends itself to the Trappist style in its use of speciality Belgian malts, coriander and other spices. Wheat malt, candied peel, a wit yeast and tamarind paste, however, bends the brew towards the wittier and speciality side of things.  The tamarind provides 10% of the fermentables, similar to the role of candi sugar in some famous dubbel recipes. It’s close to dark candi sugar in colour too, but very acidic and holds a distinct nutty-sweet flavour.  The beer is sarsaparilla brown in colour with a frothy almost purple-tan head. Aromas of jammy blackcurrants, blueberries, spiced plantain and toasted marshmallows. When drinking there is a sharp tang up front followed by a juicy and pithy fruitiness. Towards the end the darker malts and spices give the beer an earthy and warming glow.  Then, like a smile that won’t go down, the tamarind lingers after the finish, giving you this treacly sensation. A Christmassy tipple for sure, but also one for the Scrooges out there, wishing they were on a desert island!</image:caption>

It’s an 8.9% Belgian Dark Strong Ale.  Big shout out to Phil of Simple Things Fermentations for lending me Brew Like a Monk by Stan Hieronymus. A fascinating and inspiring read, which took me back to the fateful day I supped a Westvleteren 12 for the first time. Forritsome pays homage to this beer and to the myriad of marvellous modern brewers who dare to experiment. Flavours of rum soaked raisins, caramelised bananas, chocolate eclairs and subtle spices. Can’t wait to see how it develops.</image:caption>

      <image:caption>Red Roy is a hybrid of sorts. An experimental brew melding some of our favourite dark styles: wee heavy, ruby mild and Flanders red. It’s a red ale with a twist. A winter sour if you will. Inspired by my old man (who loves a red ale) and two beers that changed the game for me: Sarah Hughes’ Ruby Mild and the Duchesse de Bourgogne.  The malt base is heavy on the oats and high on Midnight Wheat. The latter adds a well rounded sweetness when used at higher quantities, a lot of colour and very little bitterness. Then a modest Azacca and Challenger dry hop lifts the fruitiness to the fore. Tastes like tart jammy malty sweets. Yum!</image:caption>

      <image:caption>This IPA is brimming with Cashmere and Lemondrop hops: 13.5G/L across the brew with almost half added at the dry hop.  The neipa style is certainly played with. The earthy notes of Cashmere shines through in the mid palate especially. It finishes with a dried apricot and a poppy pear drop lilt, bringing you back to the juice. A beer for the juice-mongers. The tropic-thunders. The hazey-heads. Lemondrop and Cashmere hops bring the citrus and the @verdantbrew and @lallemandbrewing yeast drops a tropical kick. Bubblegum-sweet and tropical aromas for days. Candied mango and pineapple complement the citrusy profiles of the hops and contrast nicely with their herbaceous notes.  Low on bitterness and high on fruity fun. It’s got a haze that goes on for days. When catching a glimpse of the Haar (a cold sea fog) hitting our East coast earlier in the summer it quickly became a great contender for the name of the beer. Mick Peter then had a lot of fun tying it in with the East coast of the beer’s origins. Cheers Mick for the funniest and most brilliantly eye-catching artwork.</image:caption>

      <image:caption>In the darkest depths of a Glasgow winter @fresh_n_fruity_glasgow, Southside's finest grocers, had some delicious ripe tamarinds on the shelf and that was it, I was hooked. Combining the tangy-sweet pulp of these funny wee peanut-looking pods with passion fruit was a real treat. The sourness of each fruit complemented the other. Passion fruit pulls you in an exotic direction while the tamarind balances the puckering sensation with a sweetness that is almost chocolatey.  Anyway, it got me inspired and reminded me of my Grandad, who grew up in the Punjab, and used to take me out for sweet Indian treats, lassis and the freshest fruits from his local green grocers... Hence the name! ‘Basant’ is a Punjabi Springtime kite flying festival that celebrates the coming of Spring. Saskia Singer's stunning artwork is reminiscent of a swirl of kites too. Not sure if she intended for this to happen! In style this beer is a fruited Berliner Weisse with added oats for body and a higher proportion of barley to wheat for a higher ABV. It’s naturally soured bringing the pH just below 3.9 before firing up the kettle. This allowed the fruits to bring more tartness later, giving us a beer of 3.16 pH in the end. That's pretty sour!  The tamarind was added sparingly to give the beer its golden orange colour. It’s all passion fruit on the nose and in the initial taste. The tartness of the fruits is integrated nicely with the sharp sourness of the beer giving the palate a zingy punch upon first sip. The puckering sensation, however, isn't overpowering. As it mellows a sticky-sweet and nutty flavour from the ripe tamarind arises, eventually giving way to a medium dry and vinous finish.</image:caption>

      <image:caption>Spring is here, the sun is shining (sort of!) and the squeakers are squeaking all over the place. Squeaker, the cutest wee word for a baby pigeon, is what we had to call our table beer. And here it is!  A 3.3% rye table table beer mainly hopped with Azacca, which brings stone fruits, tangerine, spicy mango and pine. Callista was added in the dry hop to accentuate the apricot and peachy flavours. It’s got a gorgeous apricot-like, golden orange colour and there’s a malty sweetness. Then the rye malt leaves you with a spicy smokiness. A good table beer must have a decent body and this one certainly delivers. Everything from the high mash temp, the right amount of dextrin, short sparge and low attenuating yeast was essential in getting a high final gravity. This gives it a smooth, medium body and allows it stand up next to your favourite session pales. But it’s even more sessionable!</image:caption>

      <image:caption>A devilishly complex and strong porter. 13 malts mingle to conjure scents of chocolate coated raisins. On the palate the revelling continues and is joined by notes of plum, cherry and blackcurrant. A dry and slightly spicy finish leaves you wanting to take another sip. Brewed in the depths of a Glasgow winter when the pandemic was pressing down hard. Covid had also caught up with us on a personal level and taken one of our nearest and dearest.  This is a beer that celebrates malt and its wonderful potential to create so many flavours and aromas. Chocolate malt and Special B are the stars of the show. But without the Dark Munich and Crystal malts the fruitiness wouldn’t be as sweet. There are hints of roasted coffee but not too much. Likewise the rye malts contribute a subtle spicy quality in the aftertaste. Ailsa captures the colour of this brew brilliantly. Deep ruby reds reveal themselves when held up to the light. So it was great to let loose and celebrate the 2021 @scotbeerawards on Friday. And take away something truly positive from what has felt like the hardest of times.  The perseverance of all within the industry is staggeringly impressive. Not just the breweries at the awards, but all Scottish breweries, retailers, distributors, on-trade, off-trade, and of course, all those who enjoy and support what we do.  The Best Porter Bronze award for Beelzebub is a nice little confidence boost as we trundle into dark beer season. We have a Wee Ruby Heavy in tank and a Quadruple in the works. Both of which we’re really excited to share with you. Massive thanks to @ridebrewco for allowing me to brew on their brilliant kit this year and put up with the sticky tamarind messes!</image:caption>

      <image:caption>Treat Yo Self! is a 6.6% Kir Royale inspired brew. Our love of the blackcurrant flavour, bramble tarts and all things decadent made us re-brew this beer several times over the years since its Christmas 2020 inception.  Since those early days we’ve developed the recipe to make way for more blackcurrants and a more prominent hedgerow hop character. The result is a finer balance between a dry brambly sensation and a fuller zingy-creamy fruitiness. The beer includes120 grams of all natural Blairgowrie grown blackcurrant purée per litre of beer. The carbonation is high. Nearing fruit lambic territory. A bright acidity puckers the lips after breaking through a persistent frothy pink head. The beer sits just above 3 on pH scale so be prepared for a sour hit, but the creamy edge of the blackcurrants smooths the palate before a very dry finish.</image:caption>

      <image:caption>Southside Pale is a hazy and fruity pale made with hops grown on a family owned, neutral carbon farm in East Kent. The beer is all about balance between a sweet malty backbone, a distinct British hop profile and fruity esters from the New England yeast strain. Expect a smooth mouthfeel and moderate carbonation. Brewed with premium Clear Choice barley malt, UK Cascade, Pilgrim and Ernest hops. Citrus and apricot notes dominate with pear, red berries and spicy flavours popping up too. Not to mention the tropical fruit esters from NEIPA yeast. The beer has a medium bitterness and a hedgerow edge.</image:caption>
